Amaranth is appropriate for those with wheat and gluten allergies or sensitivities. It does not contain gluten and is prepared into high quality, nutritionally rich, cereals, breads, and other snacks. Many people who are not allergic to wheat use amaranth to add variety to their diet. Sprinkle some seeds on loaves of bread or bagels before baking

Amaranth can also be used to provide essential amino acids via its high concentration of protein. It should not be the sole source of protein, however, and should be complemented with other sources.
