Description

Seitan, pronounced "SAY-tan", is the Japanese name for wheat gluten that has been cut into small pieces and cooked in a seasoned broth. It is commonly used as a meat substitute in stews and casseroles.

Wheat gluten products are very high in protein (72g per cup of raw gluten) and contain no cholesterol or saturated fats. Gluten products may also be referred to as "wheat meat".

Seitan is available in most health food stores and is kept chilled. It is quite expensive for the small package likely available. As an alternative, prepare it yourself! You can make large quantities and freeze it for later use.
