Raw Gluten Recipe

Ingredients

1 cup instant gluten flour (available at your health food store)
1 cup water
1/4 tsp. salt (optional)

  1. Place gluten flour and salt in a large mixing bowl.
  2. Add water and mix quickly, using your hands, to avoid clumping.
  3. Knead gently into a flat dough approximately 2" thick.

 

Seitan Broth

Ingredients

2 tbsp. cold-pressed, non-hydrogenated oil
1 tsp. sesame oil
1 chopped onion
1 cup water
5 cloves garlic
1-2 tsp. grated fresh ginger
1 tsp. dried thyme
2-4 cups water or vegetable stock
1/4 cup tamari or soy sauce

  1. Slice raw gluten (see Raw Gluten Recipe, above) into large or small chunks or slices.
  2. Heat both oils in a pan.
  3. Sauté onions, garlic, ginger, and thyme until onion is tender, about 3 minutes. Add water, tamari, and gluten.
  4. Slowly bring mixture to a boil and simmer over very low heat for 45 minutes.
  5. Thicken broth, if desired, with arrowroot, cornstarch, or flour.
  6. Serve over seitan
  7. Ground Seitan: Let seitan cool and grind in a meat grinder or food processor. Use in place of ground beef in any recipe.
