Description

Tofu, pronounced "TOH-foo", is an easily digestible white curd derived from cooked soybeans and occasionally other grains. It is high in protein and is an ideal animal alternative for vegetarians/vegans. Tofu comes in soft, firm, extra-firm, low-fat, smoked, marinated, and baked varieties. It can be found in the fridge of your health food store or large supermarket and is either packaged or loose, submerged in water. Silken tofu (Japanese style) can be found on the store shelves.

Once you open a package of tofu, be sure to keep the cube submerged in water. Change the water daily and use the tofu in three to five days.

Tofu is tasteless and thus acquires the flavour of the dish in which you prepare it. It is also an effective substitute for cottage or ricotta cheese in pasta or lasagna and can be blended for a yogurt replacement in dips, or for milk or cream substitutes in puddings.
